This DVD was filmed in Boulder, Colorado on July 14, 2006 and includes a 60-minute Power Point presentation Dr. Cordain made to the annual Boulderfest nutrition conference sponsored by Crayhon Research. The presentation is based upon Dr. Cordain’s seminal scientific paper of the same name (Acne Vulgaris: A Disease of Western Civilization) that was published in the prestigious journal Archives of Dermatology in 2002. In this presentation Dr. Cordain first outlines epidemiological evidence which indicates acne rarely or never occurs in hunter gatherers or non-westernized societies but rather is ubiquitous in modern, westernized societies. Although approximately 70% of the calories in the typical U.S. diet come from refined sugars, refined grains, refined vegetable oils and dairy products, these foods were rarely or never consumed by hunter gatherers. Dr. Cordain explains how these foods initiate a hormonal cascade that may result in acne. Finally, he examines the two scientific studies from the 1960s and 70s and demonstrates how the dermatology community generally came to the erroneous conclusion that diet was unrelated to acne.

This DVD was filmed in Boulder, Colorado on October 13, 2008 and represents the 60-minute Power Point presentation Dr. Cordain made to The Colorado Chapter of the National Multiple Sclerosis Society. The title of his presentation is: Potential Therapeutic Characteristics of Pre-agricultural Diets in the Prevention and Treatment of Multiple Sclerosis. In this presentation, Dr. Cordain first outlines the general nutritional characteristics of ancestral human diets that were consumed by all of the world’s population (hunter gatherers) before the development of agriculture 10,000 years ago. He further explains how the normal Western diet varies from the nutritional characteristics of hunter gatherer diets and how these differences may promote disease. Dr. Cordain then goes on to explain how certain staple elements in the Western diet may promote the development of many autoimmune diseases (including multiple sclerosis) in genetically susceptible people. Central to this theory are common dietary elements that increase intestinal permeability and allow passage of intact gut antigens (peptides and proteins) past the intestinal barrier. Once these antigens breech the gut, they may interact with certain elements of the immune system in a process called molecular mimicry to trigger autoimmunity. Dr. Cordain explains how vaccines deliberately up-regulate the immune response against foreign pathogens, whereas autoimmune diseases, from a functional perspective, represent an unintentional vaccination directed at the body’s own tissues. Finally, Dr. Cordain demonstrates how common foods contain powerful adjuvants (stimulators) of the immune response that are frequently employed in animal vaccines, but which we unknowingly ingest on a daily basis.

Dr. Cordain's previously unpublished paper describes the health effects of eating grass-fed vs. grain-fed beef. In this paper, he cites how dramatic changes in cattle husbandry practices in the past 200 years have caused fundamental changes in the nutritional characteristics of domesticated beef that may adversely impact human health by altering the fatty acid composition, the macronutrient composition, and the micronutrient composition of domesticated beef. The practice of feeding grain and concentrated feed to cattle sequestered for long periods in feedlots is not necessarily benign, but rather yields meat with a number of potentially deleterious nutritional characteristics, particularly when compared to either wild animals or grass fed cattle. The paper, available as a PDF download, is thirty-nine pages long, contains over 7,700 words, 92 references, seven tables, and ten figures. Dr. Cordain's manuscript represents the single most comprehensive review to date comparing the potential health effects of grass and grain produced beef.
